For the inquiring minds wanting to know, here's the scoop. Most chocolate mousse recipes call for butter, eggs, sugar, heavy cream, and a few other ingredients. And as dreamy as these ingredients are, they also contribute to a variety of issues for the health-conscious person.

Especially if you're on any type of special diet, like one that kicks gluten and dairy, then the typical chocolate mousse recipe is a no-no. But that doesn't mean you can no longer enjoy certain delicacies in life, like a yummy mousse and we will show you how with some pretty ingenious ingredients.

Coconut Cream

If you're familiar with Thai, Indian, or Polynesian cuisines, then you'll know that they often use coconut cream. This cream isn't the same as the water that can be extracted from coconuts. Instead, the cream comes from squeezing that delicious liquid from ripe brown coconuts.

Dark Chocolate

Again, other mousse recipes will most likely call for semisweet chocolate chips which is a mixture of dark chocolate and sugar. Straight dark chocolate will be processed from up to 90% of cocoa solids and has an untold amount of health benefits. Yay!

Aquafaba

So, here's a term you might not be familiar with. This fancy word is simply the liquid that is found in a can of chickpeas. You're most likely used to pouring this down the drain, but in the vegan and vegetarian circles, this creamy goop is gold!

How to Make Healthy Banana Chocolate Mousse

What You'll Need

Seven ingredients - that's it! Head to your pantry and refrigerator and grab:

  • dark chocolate
  • coconut cream (chilled overnight)
  • overripe bananas
  • salt (just a pinch)
  • lemon juice
  • vanilla extract
  • aquafaba (the liquid from a can of chickpease)

Directions

Step 1

Grab your electric mixer and beat the aquafaba for about 5 minutes or until it will stand in soft peaks, like egg whites. Then, set it aside.

Step 2

In a medium bowl, mash the bananas using a fork or potato masher. After they are smashed, add the salt, vanilla extract, and lemon juice. Stir everything together to combine.

Step 3

Melt the chocolate in the microwave for 45-60 seconds or until smooth.  Pour it over the mashed bananas and stir to combine.

Step 4

Finally, transfer the beaten aquafaba to the bowl with the rest of the ingredients and stir gently to combine. It is normal that the aquafaba goes down a bit.

Step 5

Refrigerate for at least 2 hours.

When and How to Serve Banana Chocolate Mousse

This yummy treat can be served as a dessert by itself or alongside a bowl of chocolate complimentary fruit, like raspberries, strawberries, pineapple. Enhance the mousse by topping it with the fruit and a spearmint or peppermint leaf.

You can also add some homemade whipped cream and coconut flakes!

    Probably a silly question but at what point do you add the coconut cream to the banana mousse. I've made it already and realised I didn't add the coconut lol
