For the Salmon:

  • 4 salmon fillets (6-8 ounces each)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Garlic powder, to taste
  • Onion powder, to taste
  • Paprika, to taste

For the Creamy Dill Sauce:

  • 2 Tablespoons Unsalted butter
  • 2 Cloves Garlic, minced
  • 1/2 Cup White Wine or Chicken stock
  • 1 Cup Heavy cream
  • 1 Tablespoon Dijon mustard
  • 1 teaspoon Cornstarch (optional, for thickening)
  • 2 Tablespoons Fresh dill, chopped
  • Salt and pepper, to taste

Instructions

  • Prepare the Salmon:
    • Pat the salmon fillets dry with paper towels.
    • Season both sides of the salmon fillets with salt, pepper, garlic powder, onion powder, and paprika. Be generous with the seasonings for extra flavor.
  • Sear the Salmon:
    • Heat the olive oil in a large skillet over medium-high heat.
    • Once the oil is hot, carefully place the seasoned salmon fillets in the skillet.
    • Sear the salmon for 3-4 minutes on each side, or until it's cooked to your desired level of doneness.
    • Remove the salmon from the skillet and transfer it to a plate. Tent the plate with aluminum foil to keep the salmon warm.
  • Make the Creamy Dill Sauce:
    • In the same skillet, add the butter and minced garlic. Sauté the garlic for about 1-2 minutes until fragrant.
  • Deglaze the Pan:
    • Pour in the wine or chicken stock, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Allow it to simmer for 2-3 minutes to reduce slightly.
  • Add the Cream and Dijon Mustard:
    • Reduce the heat to medium-low and stir in the heavy cream and Dijon mustard.
    • Let the sauce simmer gently for 2-3 minutes, stirring frequently.
  • Thicken the Sauce (Optional):
    • If you prefer a thicker sauce, mix the cornstarch with a little water to create a slurry. Stir this into the sauce and cook for an additional 1-2 minutes until it thickens to your liking.
  • Season and Add Dill:
    • Taste the sauce and season it with salt and pepper to your preference.
    • Stir in the chopped fresh dill. Reserve some dill for garnish if desired.
  • Serve:
    • Place the seared salmon fillets back into the skillet with the creamy dill sauce.
    • Let the salmon simmer in the sauce for an additional 2-3 minutes to heat through and absorb the flavors.
  • Garnish and Enjoy:
    • Carefully transfer the salmon fillets to serving plates.
    • Spoon the creamy dill sauce over the salmon and garnish with additional fresh dill if desired.
